Creamy Roasted Cauliflower Soup

Creamy Cauliflower SoupI’ve been wanting to try this recipe again for sometime. I tried it years ago after seeing it on TV but added my own mix of spices and it turned out pretty darn good, which is a miracle of sorts since I don’t like cauliflower! As an additional bonus, the soup is amazingly creamy without actually needing to add cream or milk. Easy and quick recipe that is healthy and fuss free.

Ingredients (Serves 4-6) 

  • 1 medium cauliflower 
  • 1 can of chicken stock (330ml) [Campbell is best!]
  • 1 large yellow onion
  • 3 cloves of garlic
  • Turmeric powder
  • Paprika powder
  • Chili powder
  • Cumin powder


  1. Segment the cauliflower into the smaller pieces so that it cooks more evenly
  2. Finely dice the yellow onion and brown it in a large heavy bottom pot
  3. Roughly dice and add to the browned onions; stir well and set aside after the garlic is fragrant
  4. Add a few pinches of salt and ground black pepper, a dash of cumin, a dash of chili, a few dashes of turmeric and paprika to the cauliflower and mix well
  5. Into a heavy bottom pan, over medium heat, add enough olive oil to coat the surface
  6. When the oil is smoking, add the cauliflower to the pan, adding enough to only form 1 layer; if need to, separate into a few batches
  7. Leave for 90 seconds before stirring to allow some charring to happen
  8. After each stir leave for 30-50 seconds to let the char slowly develop
  9. After about 10 minutes, the cauliflower will have a nice and pretty even char
  10. Add the cauliflower into the pot with the onion and garlic, stir well over medium heat
  11. Add the chicken stock and 1 can of water before turning to high heat and bring to a boil
  12. Once boiling, turn to low heat and let simmer for 30 minutes before turning off the heat and leave it to cool to room temperature
  13. The cauliflower is like a sponge and will really absorb the flavors and a fair amount of the liquid
  14. Blend the mixture finely and heat before serving with simple toasted bread
  15. Done!
