Croquettes of the World: Australia

Sweet potato, squash,ginger, cinnamon, nutmeg and maple syrup? Somehow, this mish mash and melting pot of flavors remind me of Australia, one of my favorite countries in the world.

Ingredients (Serves 4) 

  • 2 large sweet potatoes
  • 1/4 of a butternut squash
  • Cinnamon powder
  • Nutmeg powder
  • Ginger powder
  • Maple syrup
  • Japanese breadcrumbs

Getting it Done! 

  1. Remove the skin of the potatoes and cut into quarters
  2. Remove the seeds from the squash and cut into quarters
  3. Steam the potatoes and squash together for about 15 minutes or until its soft enough to mash with a fork
  4. Let cool for about 15 minutes
  5. Separate the squash from skin by using a spoon to scoop out the ‘flesh’
  6. Place the potatoes and squash in a pot, adding 1 sprinkle of nutmeg, 2 sprinkles of cinnamon and 3 sprinkles of ginger and 4 tablespoons of maple syrup
  7. Mash everything together to incorporate all the ingredients using a potato masher
  8. Tip: Line a tray or plate with cling wrap to prevent sticking to the surface
  9. Use your hands to form small patties and set aside on top of the cling wrap
  10. Leave in the freezer for at least 1 hour and up to 2 hours
  11. Set aside the breadcrumbs in a dry bowl and remove the patties from the freezer
  12. Using your hands, press the breadcrumbs into the patties, shake off excess and set aside back into the freezer until ready to fry
  13. Into a non stick pan over medium heat, place about 2-3cm depth of any vegetable or peanut oil
  14. Tip: Throw a tiny pinch of breadcrumbs into the oil, if it bubbles immediately, the oil is ready
  15. Place a few patties into the oil, taking care to leave space between each one
  16. Fry for about 2 minutes each side or until golden brown
  17. Leave on a drying rack to cool before serving
  18. Goes great with Vanilla ice cream
  19. Done!
