Medley of Veggies with Spicy Balls

Tomatoes, peas, corn, onion and spicy meatballs equates to a hearty, healthy meal fantastic for a cold, rainy day. Easy peasy (pun intended) recipe done up in no time.

Ingredients (Serves 4 to 6)

  • 500ml of chicken stock (Campbell is best!)
  • 1 can of diced tomatoes (or dice 4 large fresh tomatoes)
  • 1 can of baby peas
  • 1 ear of sweet corn
  • 1 medium yellow onion
  • 4 cloves of garlic
  • 250g of minced pork
  • Garlic powder
  • Turmeric powder
  • Cayenne pepper

Getting it Done! 

  1. Over medium heat, brown the onion in a medium pot
    (see post on browning onions) before adding the garlic finely diced
  2. Stir until the garlic is fragrant then add the tomatoes and baby peas
  3. Using a sharp knife, remove the corn kernels by cutting down lengthwise, holding firmly onto the stem
  4. Add the corn to the pot, stirring well, before adding the chicken stock
  5. Turn heat down and leave to simmer for at least 30 minutes before turning off the heat
  6. Tip: When the soup is cool, set aside half the mixture and blend the other half before mixing it together into a pot
  7. Heat the soup over medium heat
  8. Into a bowl, add the minced meat, a generous dash of the garlic powder, turmeric powder and cayenne powder before mixing well
  9. When the soup is boiling, use your hands (or 2 tablespoons) to roughly form the meat balls and add directly into the soup
  10. Let the meat balls cook for 10 minutes
  11. Best served with rice or toasted bread
  12. Done!
