ABC Fritters

Been wanting to whip up something with corn for quite a bit. Decided to throw in asparagus and bacon into the mix. And fry it all up into a fritter. Takes some preparation but its yummy, healthy(ish) and great for kids as well! So here ya goes – Asparagus, Bacon and Corn (ABC) Fritters.

Ingredients (Serves 4)

  • 8-10 stalks of baby asparagus
  • 4 slices of back bacon
  • 1 whole corn
  • 1/2 large yellow onion
  • 1/2 cup of all purpose flour

Getting it Done!

  1. To prepare the fritter batter, pour the flour into a medium bowl, add 2 pinches of salt and a generous amount of freshly ground black pepper
  2.  Slowly add water, stirring continuously
  3. When you reach a consistency where the batter can completely coat the back of a spoon, it ready to set aside
  4. Finely dice the onion, brown (see post on this) and set aside
  5. Cut the bacon into large chunks and brown it in a heavy bottom pan over medium heat before setting aside
  6. TIP: Even though bacon has fats which will render out with heat, always add a drizzle of oil before adding the bacon to help the browning and prevent sticking
  7. Cut the asparagus into small pieces, roughly as small as a corn kernel, set aside
  8. Remove the kernels from the corn by firmly cutting down from the stem to the tip, set aside
  9. Into a non stick pan, add about 2 cm depth of oil (any vegetable or peanut oil works), heat over medium heat until it bubbles rapidly when a wooden chopstick is inserted
  10. Just before frying, all the onion, asparagus, bacon and corn into the batter, stirring well to combine
  11. TIP: When frying fritters with stuff in it, keep it small. It allows the fritters to crisp up, cook completely and lets you flip without fuss
  12. Add only 1 tablespoon of the mixture to the pan at a time, making sure to leave space between fritters
  13. It’ll take about 2-3 minutes per side, so be patient and don’t mess with it
  14. Serve with my Mustard Marmalade Orange sauce
  15. Done!
