Apple Matchsticks

A healthier option to french fries with more interesting tastes and textures to boot! I often use this as a side dish but it goes well as a accompaniment to beer if you add a pinch of salt.


  • Red Apple (Any variety will do but do not use those that are very ripe)
  • Corn flour
  • Cinnamon
  • Nutmeg
  • Sugar

Getting it Done!

  1. Cut off the top and bottom of the apple before halving it 
  2. When halving it leave about a finger width from the core so that you do not have to deal with the seeds and the core
  3. Use a mandolin, set to the thickest setting, to slice the apple. Hold the top of the apple
  4. Next stack a few slices and use a knife to slice it into matchsticks width
  5. In a bowl, add a generous amount of flour, a generous pinch of sugar, a pinch of nutmeg and a few pinches of cinnamon. Stir the dry mixture
  6. Coat the apple with the dry mixture and set aside
  7. In a heavy bottom pot, over medium heat, add 4-5cm depth of peanut or any vegetable oil
  8. When the oil reaches 180 Celsius (or when bubbles emerge furiously from a wooden chopstick), gently add a handful of the apple matchsticks
  9. Stir the apple matchsticks and remove when golden brown
  10. Set on a kitchen towel to drain excess oil and set on a drying rack to cool
  11. Done!
